DIY Danish Pastries

Yes, this is yet another heart shaped post and yes it's using ready to roll pastry. 

I promise it's the last one for 364 days ;)

But it's delicious so what's there not to love?!

Cut heart shapes from ready to roll puff pastry, layer up your fillings, bake in the oven on a medium heat for 10 minutes and poof - beautiful puffy danish.

I just used some icing sugar and water for the drizzle on the top. You want to make it to a consistency that's runny enough to drizzle, thick enough to hold it's shape.

Some of mine were better than others, but after one bite who cares?!

Now go forth and eat!

Filled & Baked Popover Yorkshire Puddings

We adore Yorkshire puddings. We even have them with Christmas Dinner. Whatever the meat, whatever the occasion.

My sister in law who lives in America, absolutely loves them too.

But instead of serving them hollow with a roast dinner, why not try making them into a dish in themselves.

Popover Yorkshire Pudding Recipe

This dish works as one large pudding to slice like a quiche or make mini versions, perfect for children's teas.

To make the batter mix whisk together 6 eggs and 350ml / 1 and 1/2 cups milk. Add 190g / 1 and 1/2 cups flour and season with a pinch of salt and pepper. This would make approximately 2 large puddings or 12 small. Bake in a preheated oven at 220C/425F/Gas Mark7 for 30 minutes.

If you make your own batter, grease your tin well and half way through baking add your other ingredients.

Or you can totally cheat and save time buying frozen one. Ssh don't tell my husband he thinks I slaved over them.

Ingredients:

  • Frozen Yorkshire puddings
  • Eggs - allow 1 egg per 3 puddings
  • Chopped pancetta
  • Chopped mushrooms
  • Diced avocado
  • Chopped chives/parsley
  • Prosciutto if making a large version 

Preheat your oven to 180C/350F/Gas Mark 4. If using frozen yorkshires you want to cook them more slowly in a more moderate heat, to allow the eggs to bake and set.

Crack an egg into a small bowl. Spilt the egg between 3 small yorkshires. Add the chopped mushrooms, pancetta, herbs and avocado. Season.

If making one larger version use 3 eggs and avocado fingers wrapped in prosciutto.

Bake for 10-15 minutes until the egg centres have set.

Serve warm. I had to wait patiently whilst they cooled a little as I was desperate to try one!

Heart Croissants • a lovely brunch

I have an unhealthy obsession with ready made pastry. In any shape or form. It is brilliant. You can keep it in the freezer, and create really impressive meals and snacks in minutes.

I spied some ready made croissant dough in a tin in the chilled aisle of the supermarket and bingo! The idea for heart shaped croissants was born.

This blog is basically one big love fest over the next week. People, places and food, heart shaped food.

Give it a go, they are easy as a pastry pie.

Ingredients:

  • ready to roll croissant dough - chilled and left at room temp for 10 minutes
  • cream cheese
  • fruit puree
  • blueberries
  • cherries

Pre heat your oven to 350F /Gas Mark 4/ 180 degrees.

Twist your tin to open and roll out your pastry.

The pastry I used was pre perforated into triangles but I used a heart shaped cookie cutter to make 2 hearts per triangle. Keep the remainder covered to avoid drying out.

Knead the leftovers and re roll to use up the excess.

I made a few in a more traditional shape, (roll the wider end of your triangle towards the pointed end) I prefer them longer personally but just shape them into a moon before placing in the oven for a picture perfect croissant.

Take one heart and add a teaspoon of cream cheese, a teaspoon of fruit puree (spread your puree and cheese over the base) and top with some chopped fruit.

Place the second heart on top and press the edges together gently. Add a slice of cherry (they make good heart shapes) in the centre, press lightly into the pastry.

Bake in the oven for approximately 8 minutes, until golden brown.

We served them with a sprinkle of icing sugar, glasses of cold milk and orange slices.
