pesto pastry pizza
My friend made a delicious pastry tray bake last week, as the adults party food, at her son's 3rd birthday party. I couldn't believe it when she said the kids wolf it down, so I thought why not give it a go!
My big boy has never eaten sun dried tomatoes or pesto so I expected to get a "urgh, it's yucky" reaction, but instead I got a clean plate!
An easy, quick lunch and great for hiding things they may say they don't like, but really it is just the look of them, or haven't tried before!
You will need: ready to roll puff pastry, tomato puree, pesto, sundried tomatoes, mozzarella.
Cut your rectangle of pastry and score a 2cm border around the edge.
Spread your puree and pesto inside the border, add the sundried tomatoes and mozzarella, and if you fancy, lay strips of pastry over the top.
Oven bake for 15 mins at 200 degrees.
You could make a large one for a family lunch or mini ones for kid's parties!
